Chocolate Lotus Seed Paste Moon Cake
Ingredients

110 g : sugar, icing
50 g : butter
2 no : egg, whole, fresh
25 g : cocoa powder
0.5 tsp : cinnamon, powder
50 ml : milk
300 g : flour, all-purpose
0.25 tsp : baking powder
0.25 tsp : sodium bicarbonate
0.25 tsp : salt

1.2 kg : paste, lotus seed
120 g : chocolate chips
120 g : nut, hazelnut
0 . : The Glace
1 no : egg, whole, fresh
50 g : chocolate, bitter sweet

Preparation

"The Pastry
Cream butter and icing sugar. Add gradually the slightly beaten egg. Add the cocoa powder, cinnamon spice, and milk. Lastly mix in the flour, baking powder, sodium bicarbonate, and salt and knead into dough. Allow the dough to rest for 30 minutes.

The Filling
Combine the lotus seed paste, hazelnuts, and chocolate chips. Pre-heat oven at 180°C. Divide pastry dough into 50gram each and weight and filling into 140gram each in weight. (Making about 10 moon cake)
Wrap each portion of the dough with a portion of the filling. Shape into a round ball and press into wooden moon cake mould. Tap to remove from mould and transfer to a baking tray. Spray with water.
Bake the cakes for 10 minutes. Remove from oven and allow to rest for 10 minutes. Egg-wash the surface of the moon cakes. Bake for another 10 minutes.
