Welcome Mid-Autumn With Hilton’s New Flavours

Hilton Singapore unveils two new mooncake creations this mid-autumn season – snowskin caramelised chestnut cheese and baked white lotus paste with black truffle, packaged in the new oriental crescent mooncake box, which opens to an auspicious new moon, symbolising the harmony and unity of the festival. Also available are the hotel’s signature cheese mooncakes, including the hibiscus & mandarin orange mooncake, peanut caramel mooncake and mocha coffee and chocolate pearls mooncake.

Bringing a twist to the mid-autumn festival is the pairing of cheese mooncakes and wine, something sommelier Jean-Christophe Froge is all too happy to share. For the hibiscus and mandarin orange cheese mooncake, the 2005 Villa M Moscatel Gianni Gagliardo (Italy) is recommended. Coupled with the tangy flavour of the mooncake, the sparkling, slightly sweet wine, with its fresh apple and pear aromas, brings out a glorious fruity and floral sensation. The sweet cheese mooncakes (peanut caramel and mocha coffee and chocolate pearls), on the other hand, go well with the 2001 Pacherenc du Vic Bihl Alain Brumont (France). Smooth, creamy cheese blended with caramel, coffee, chocolate and nuts are nicely complemented by the rich, full-bodied sweet white wine, its quince pear and butterscotch flavours giving the combination a decadent flourish.
